Cashew Chicken Lettuce Wraps


We made these easy and delicious chicken cashew lettuce wraps the other night. The cashews add a great crunch to this flavorful dish. They took only about 20 minutes, we doubled the recipe and it made about 12 wraps. (Below is the doubled recipe, cut in half if you are looking to make less wraps).

Ingredients for the Filling
6 chicken breasts diced
1 head of iceberg lettuce
3 tbsp olive oil (or oil of choice)
1 cup onion, diced
2 garlic cloves, minced
1 tsp soy sauce
1/3 c cashews, chopped
salt and pepper to taste

Ingredients for Stir Fry Sauce
4 tbsp soy sauce
2 tbsp rice wine vinegar
2 tbsp brown sugar
1/2 tsp ground red pepper
1/2 tsp ground ginger
2 tsp sesame oil
*we made an additional half batch of this to pour over the wraps





Mix all stir fry sauce ingredients and mix well, dissolving the brown sugar. Set aside.

Heat the olive oil in a pan over medium to medium high heat. Add the diced chicken and brown (about 5 minutes). Remove the chicken from the pan and set aside.

Add the onions, garlic and 1 tsp soy sauce to the pan (you may need to add a little bit more oil if the pan is too dry), cook until onions are tender and browned. 

Add the stir fry sauce, browned chicken and cashews. Saute mixture for a few more minutes and remove from heat. 

Spoon the mixture into individual lettuce pieces, and add extra sauce if desired.

This is a great flavorful appetizer or dinner, especially if you are looking to cut back on calories.
